  • 2 tsp chopped celery
  • ½ tsp salt
  • Fresh ground black pepper (to taste)

  • 2 cups chicken broth
  • 1 cup whole milk
  • 2 heads broccoli, chopped into florets
  • ½ cup cornstarch
  • ½ tsp garlic powder
  • 1 cup shredded sharp cheddar cheese

Method
 

  1. Melt butter in a large saucepan. Add onions and carrots. Cook until tender.
  2. Stir in chicken broth, celery, salt, pepper, and thyme. Let it simmer for 2 minutes.
  3. Add broccoli and simmer uncovered for 15 minutes until tender but vibrant.
  4. In a small bowl, whisk milk and cornstarch. Pour into soup and stir to thicken.
  5. Lower heat and add cheese and garlic powder. Stir until smooth and creamy.
  6. Garnish with more cheese, herbs, or a swirl of cream. Serve hot and enjoy!
