  • 3 red capsicums (chopped)
  • 6 small red chillies
  • 100 ml cooking oil
  • 1 onion (finely chopped)
  • 3 golden shallots (finely chopped)
  • 3 spring onions (finely chopped)
  • 1 celery stalk (chopped)
  • 1 handful fresh efiri (African mint) (optional)
  • 1 pinch 1 pinch salt
For The Fish and Rice

  • 1 kg firm fish fillets (cut into large cubes)
  • 25 g chilli flakes mixed with 1 tsp salt flakes
  • tablespoons cooking oil
  • 2 carrots (chopped)
  • 1 red capsicum (chopped)
  • 1 green capsicum (chopped)
  • 2 tomatoes (chopped)
  • 2 zucchini (chopped)
  • 1 pinch salt
  • 250 ml water (1 cup)
  • 2 cups parboiled long-grain rice
  • Fried plantain chips (to serve)
